This special cut is made out of the chuck and, yes, The (R)evolution sort of invented it. That is why it is called the BBQ steak, because it has parts with lean meat, but it also has the juicy fat that gives all the flavour. The secret of this steak is, of course, not to overlook it, over-season or marinate at all. You can find all that out in the video.
It will take you maximum 10 minutes to start eating!
Take the steak out of the package and season with salt to taste on both sides. Heat a skillet or grill pan and sear the beef for no more than 3-4 minutes on each side. Be very careful not to overcook it. Well done is not done well at all. When turning the meat, lightly grease it with olive oil using a brush.
Season with black pepper. Turn the steak again for a very short time. Remove from the heat and let it rest on a wooden platter. Season with some salt and pepper again. Slice it against the grain. Ideally, you should have a very nice pink colour in the middle of the slice.
